Cranberry and Macadamia Nut Bark

  • 1 (1lb.) pkg. vanilla-flavored candy coating, cut into pieces
  • 1/2 cup dried cranberries, dried cherries or raisins
  • 1 (3 1/2 oz.) jar macadamia nuts
Line cookie sheet with foil. Melt candy coating in medium saucepan over low heat, stirring constantly. Remove from heat. Stir in cranberries and nuts. Spread on foil-lined cookie sheet. Cool completely. Break into 1 1/2 inch pieces. Store in airtight container. About 3 dozen (1 1/2 inch).

Cranberry Pudding

  • 1 cup sugar
  • 2 egg yolks
  • 1 heaping tbsp.butter
  • 1 cup milk
  • 2 cups fresh cranberries
  • 2 cups unsifted flour
  • 3 tsp.baking powder
Combine sugar,shortening, and egg yolks. Stirring well, add milk,cranberries, flour,and baking powder. Bake 45 minutes at 350 degrees in a 9¹x9¹pan.

Sauce:

  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tbsp. butter
  • 1 tsp. vinegar
  • 1 tsp. flour
  • 1 tsp. vanilla
Cook 1-2 minutes.

Cran-cherry Mold

  • 2 (3oz.) pkg.cherry gelatin
  • 1 3/4c. boiling water
  • 1 (20oz.) can crushed pineapple
  • 1 (16oz.) can whole cranberry sauce
  • 1 c. sour cream
Dissolve gelatin in boiling water. Add undrained pineapple and cranberry sauce, stirring until cranberry sauce melts.Chill until partially set.
Pour half of gelatin mixture into a 6 1/2 cup ring mold. Chill until almost firm. Let remaining gelatin stand at room temperature.
Spread sour cream evenly over the almost firm gelatin in the mold. Gently spoon the remaining gelatin mixture on top of the sour cream layer.
Chill until firm. Unmold onto serving dish.
Makes 12 servings.

Cranberry Kucken

  • 1 well-beaten egg
  • 1/2c. sugar
  • 1/2. milk
  • 2 tbsp.salad oil
  • 1 c. sifted flour
  • 2 tsp.baking powder
  • 1/2 t. salt
  • 1/2 lb. (2c.) cranberries
  • 1 recipe Crumb Topper (below)
Combine egg, sugar, milk and salad oil. Sift dry ingredients; add to egg mixture. Mix well.
Turn into greased 8²x8²x2² pan.
Put cranberries through food chopper, using coarse blade, sprinkle over batter. Sprinkle crumb topper over cake.
Bake 375 degrees 25-30 minutes or till done. Serve warm.

Crumb Topper: Mix 3/4 c. flour
Cut in 3 t. butter and 1/2 c. sugar.

Wish Upon a Cranberry Star

  • 3 oz.pkg.raspberry jello
  • 3 oz.pkg.orange jello
  • 1/4 t.cinnamon
  • 2 c. boiling water
  • 1 c.cranberry juice
  • 1 c.cranorange cranberry orange sauce
  • 1 can (11oz) mandarin orange sections, drained
Dissolve gelatin and cinnamon in boiling water. Add cranberry juice cocktail and sauce. Chill until thickened. Add orange sections and pour into 5 cup mold.

Cranberry Orange Bread

  • 2 c. flour
  • 1 1/2 t. baking powder
  • 1 c. sugar
  • 1/2 t. salt
  • 1/2 t. baking soda
  • 2 tbsp. melted butter
  • 2 tbsp. hot water
  • 1 c.coarsely cut cranberries
  • 1 egg,slightly beaten
  • 1/2 c. orange juice
  • 1/2 c. chopped nuts
  • grated rind of 1 orange
Sift dry ingredients together. Add egg, melted butter, orange juice and hot water. Mix only until ingredients are moistened.
Fold in cranberries, nuts and grated orange rind.
Pour into oiled 9²x5² pan. Allow to stand 20 minutes.
Bake at 350 degrees for hour.
Makes 1 loaf.

Cranberry Muffins

  • 2 cups flour
  • 1/2 cup sugar
  • 1 tbsp. baking powder
  • 1/2 tsp. salt
  • 1 cup cranberries
  • 3/4 c. 1% milk
  • 1 lg. egg
  • 3 tbsp. vegetable oil
Heat oven to 425 degrees. Coat nine 2 1/2 inch muffin cups with non-stick cooking spray.
In large bowl stir in first five ingredients until blended. In small bowl whisk remaining ingredients, add to flour mixture stir until moist.
Bake 20 min. or until wooden toothpick comes out clean.

Cranberry Cheese Nut Bread

  • 2 1/2 c. all-purpose flour
  • 1/2 c. granulated sugar
  • 1/2 c. packed brown sugar
  • 3 1/2 tsp.baking powder
  • 1 tsp. salt
  • 3 tbsp. vegetable oil
  • 1 1/4 c. milk
  • 1 egg
  • 1 tbsp. plus 1 tsp. grated orange peel
  • 1/2 c. chopped nuts
  • 1 1/2 c. shredded Cheddar cheese (6oz)
  • 1 c. cranberries, cut into halves
Heat oven to 350 degrees. Grease bottom only of loaf pan, 9x5x3 in.
Mix all ingredients; beat 30 seconds. Pour into pan.
Bake 65-70 minutes. Cool slightly and then remove from pan.
